Ingredient of the Month: Mandarins
This month’s favourite ingredient has been chosen by our Chef Patron, Diego Jacquet. Here’s Diego on why he’s reaching for the mandarins:
-Why Mandarins? I love fruits that have acidity and a sweet finish – they are perfect for balancing dishes.
-What dishes do you use them in? Our burnt and caramelised mandarins with sweetbreads is my favourite dish (pictured), but I also love them with yoghurt, rosemary or thyme, and chocolate!
-Where do you source from? Our wonderful fruit & veg suppler, Natoora, sends us the best Mandarino Tardivo di Ciaculli from a small village called Ciaculli, outside of Palermo, Italy.
-Best cooking tip? Peel, cut in half, and torch! The slightly burnt flavour is just awesome.
